Recipe -Diabetic Friendly Dark Chocolate Muffins

One way of incorporating protein in your diet is by using high protein shakes in your recipes.

These high protein, low carb muffins are ideal for people who need extra calories or protein, but are often unable to be consistant with their oral nutritional shakes. This tasty and easy recipe is made with with chocolate Glucerna®, but can also be made from other high protein/low carb formulas.

This recipe was inspired and slighlty modified from Glucerna Canada’s Chocolate Orange Muffin Recipe

Ingredients

  • 1 bottle of Chocolate Glucerna®
  • 250ml (1 cup) all-purpose flour
  • 150ml (2/3 cup) quick oats
  • 5ml (1tsp) baking powder
  • 1ml (1/4tsp) baking soda
  • pinch of salt
  • 80 ml (1/3 cup) sugar
  • 60ml (1/4 cup) cocoa powder
  • 1 egg
  • 60ml (1/4 cup) unsweetened apple sauce
  • 45ml (3tbsp) softened butter
  • 60ml (1/4 cup) dark chocolate chips

Steps

Preheat oven to 190oC (375oF)

In one bowl, mix all dry ingredients together. In a second bowl, mix all wet ingredients together

Add the wet ingredients into the dry ingredients and mix

Add the chocolate chips

Pour the batter up to 3/4 into pre-oiled muffin moulds, and bake in oven for 15 minutes, or until a toothpick comes out clean
